About
BackcountryChef started with a simple truth: wild food tastes incredible, but most people have no idea what to do with it once they get it home.
I've been hunting and fishing since I was 15 years old. What started as a teenage fascination with the outdoors turned into a lifelong passion for wild game and the art of preparing it properly. There's something deeply satisfying about harvesting your own food and transforming it into restaurant-quality meals.
After years of self-taught cooking, I decided to get serious about my craft. I studied culinary arts and worked in professional kitchens, learning French techniques and knife skills that would later become essential to everything I do. That formal training gave me a foundation, but it was combining it with my wilderness experience that made everything click.
Why BackcountryChef Exists
I created BackcountryChef because I saw too many hunters and anglers struggling with the same problems I once faced. They'd bring home beautiful venison, wild boar, or fresh-caught fish, only to end up with tough, gamey meals that their families wouldn't eat.
That shouldn't happen. Wild game, when prepared correctly, is some of the finest, cleanest, most flavorful meat you can eat.
"My mission is simple: help people cook wild food with confidence, using techniques that work, so nothing goes to waste and every meal is something worth celebrating."
Whether you're a seasoned hunter or someone who just received their first package of venison from a friend, I'm here to help you turn wild ingredients into incredible meals your whole family will love.

I break down complex techniques into simple, achievable steps. My recipes include both metric and imperial measurements, and I always explain the "why" behind each technique so you truly understand what you're doing.
Beyond the Recipes
This isn't just about cooking. It's about respecting the animal, honoring the hunt, and making the most of what nature provides. It's about gathering around a table with people you love and sharing food that tells a story.
I live this lifestyle every day. When I'm not in the kitchen, you'll find me in the wilderness—hunting in remote forests, fishing mountain streams, or simply observing and learning from the land. These experiences shape everything I teach.
My approach combines traditional wisdom with modern technique. I'll show you how to make classic wild game dishes and innovative recipes that push boundaries. Whether you want to master venison terrine or just cook better backstrap steaks, I've got you covered.
